It's a Soup Kind of Day
Whenever the weather starts to get colder and rainier, I love to have soup for dinner. This is one of my favorites soups for dinner. It is a Sweet Potatoes Wild Rice Fall Soup. Now I know what you thinking that it is sweet potatoes puree, but its not. It is a creamy (not cream) hearty soup.
4 cups of chicken or vegetable broth
2 cups of water
2 large sweet potatoes - peeled and cut into cubes
2 carrots - peeled and chopped
3 celery stocks - chopped
3 handfuls of kale - chopped
1 onion - chopped
1/2 cup of wild rice
1/4 cup of flour
1/2 cup of milk
In a large pot combine broth and water.
Then add the sweet potatoes, carrots, celery, and onion. Let that boil and simmer for 30 mins. Then add the rice and let it simmer for another 15 mins.
In a small saucepan combine milk and flour, and whisk together on medium heat until it becomes thick.
Add the cream sauce to the soup and stir. Then add salt and pepper to your liking.
